Greek Meatballs with Chickpea Tomato Salad {Simple Meal Prep}

With that being said, I want to share another SIMPLE meal prep recipe.

Mastering the art of cooking for yourself and your family takes time and my goal is to show you it can be easy!
This is by far my favorite recipe that I have shared, and I can’t wait to make it again!! It is all my FAVORITE food…ground beef, chickpeas, tomatoes, cucumbers, onions, feta cheese…yum yum!

Greek food is one of my favorites because it tastes fancy and it is so satisfying! The flavor in these meatballs packs a punch with the parsley and mint. And the salad tastes exactly like a healthy Italian dressing salad that you would bring to picnics growing up…but no gluten and no processed oils! 🙂

Greek Meatballs with Chickpea Tomato Salad

Ingredients:

Greek Meatballs

  • 2.5-3 lbs grass-fed beef or lamb
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 egg
  • 1/3 cup parsley, chopped
  • 8 mint leaves, chopped
  • 1/2 tsp oregano
  • 1 tsp salt
  • black pepper

Chickpea Tomato Salad

  • 2 15oz cans chickpeas or 4 cups
  • 2 organic cucumbers, cut in quarters
  • 2 pints of cherry tomatoes, cut in half
  • 1-2 green bell peppers, cut in 1/2 inch pieces
  • 1 red onion, cut in 1/2 inch pieces
  • 8 oz feta cheese

Greek Vinaigrette

  • 1/2 cup red wine vinegar
  • 2 lemons
  • 1 TBSP dijon mustard
  • 1 cup of olive oil
  • 2 tsp oregano
  • 1 tsp salt
  • pepper

Directions

Preheat the oven to 400 degrees. Prep a baking pan with parchment paper. Next mix up the meat mixture with all the ingredients listed above. Form the meatballs into tablespoon-sized balls (1 inch) and set on your pan. Bake the meatballs for about 18 minutes.

Next prep the salad ingredients. Chop and mix together all the ingredients listed above. Red onion, tomatoes, peppers, cucumbers, feta (if needed), add into a big bowl and mix together!

Last, make the vinaigrette dressing! Mix all the ingredients and then pour over the salad. Toss until all the veggies are well-coated.

Portion out the meatballs and salad into 10 glass containers. Enjoy and feel excited that now you don’t have to worry about 10 meals for the week. 🙂
